2.25kg leg of lamb (pre-boned weight), butterflied (ask your butcher to do this, or find at your local supermarket)
6 garlic cloves
5 lavender sprigs, leaves and flowers chopped
2 tbsp olive oil
1 tbsp lemon juice
2 tbsp balsamic vinegar
For The Claqueret:
400g fromage blanc
100g soft goat’s cheese, crumbled
6 tbsp crème fraîche
3 shallots, finely chopped
3 garlic cloves, crushed
1 tbsp white wine vinegar
1 tbsp dry white wine
1 ½ tbsp extra virgin olive oil
3 tbsp chives, finely chopped
3 tbsp parsley, finely chopped
3 tbsp chervil, finely chopped
For The Glaze:
2 tbsp balsamic vinegar
2 tbsp lavender honey
2 lavender sprigs, leaves and flowers chopped
Begin by mixing all of the ingredients for the Claqueret together in a bowl. The flavours will need as much time as possible to infuse together, so it’s best to do this a few hours ahead, and leave to marinade.
Top Tip: If you do this in advance, remember to leave the Claqueret out at room temperature before you begin cooking.
At this stage is best to start pre-heating the oven to 220c/200c fan/ gas 7. However, if that slips your mind the BSA65222PXUK’s handy 5-minute pre-heat function is always there to save the day!
Carefully lay the lamb out flat with the flesh side facing upwards. Using a tiny knife begin to make small incisions over the flesh and fat. Combine crushed garlic, lavender leaves and flowers, olive oil, lemon, balsamic vinegar, and honey with sea salt to make the paste.
Place the lamb into a roasting tin and apply the paste into the incisions, ensuring you cover as much as possible.
Mix the ingredients for the glaze and apply on to the fat side of the lamb. Season to taste and roast in the BSA65222PXUK for 15 minutes.

Next, reduce the heat to 190C/170C fan/gas 5 and roast for a further 20 minutes. At this stage the lamb will be pink in colour, so thoroughly cover with foil and allow it to rest for around 10 minutes.
Finally, carve the lamb and ensure no juices go to waste. Serve with the Claqueret alongside any additional trimmings.
